Happy Wednesday everyone! How is your week going? We are plugging away (mostly at home) during this strange pandemic/quarantine time. I will say, family dinners are really nice right now. We are all home and can enjoy a relaxed meal together every night. That is one thing I have really enjoyed during all this craziness. One of our favorite meals lately has been this One Pot Creamy Garlic

Honey-Lime Chicken Enchiladas
I am bringing one of our most popular recipes out of the archives in honor of 'Cinco de Mayo' tomorrow. My sister Brittany made these awesome Honey Lime Enchiladas for me after I had my 5th baby. I remember thinking they were the BEST enchiladas I had every eaten! Even now, almost 13 years later, I still love them and think of her and her sweet act of service, every time I make them!

Time flies when you are having fun, and this little blog has been so fun to do (and thank you for your support and love over the years)! This is a fabulous chicken marinade that my whole family LOVES! So, I thought it was time to bring it out of the archives and freshen it up with a
Easy Slow Cooker Pulled Pork
Whenever we have people come visit from out of state, I like to serve a classic Southern BBQ dinner to welcome them to Tennessee. My boys think the best part of the menu (the star of the show) is the pulled pork. I do not own a smoker, like our favorite local Southern BBQ restaurant uses for their pulled pork, but this slow cooker method is arguably just as good (or at least darn close).
