This Coconut Ice Cream is a coconut lover's dream! It is creamy with a rich coconut flavor. I prefer the coconut toasted and sprinkled on top, but I really like it mixed into the ice cream, too. A fun variation is to add 1/2 cup of chopped macadamia nuts for a little crunch and a tropical feel! You will think you are in Hawaii with just one bite!
