This is hardly a recipe but more of a fun entertaining idea! Last week I invited my neighbors and their kids over for a fun pool party and lunch. I served this Cobb salad along with grilled hot dogs for the kids. I offered the choice of two of my favorite home made dressing… buttermilk ranch, and red wine vinaigrette (recipe below but you could also make this Shallot and Mustard one here). Both are great!! I used a big shallow wooden bowl, first layering lots of baby spinach and chopped romaine lettuce, then I added all the toppings in piles –crispy bacon, hard boiled eggs (using this Instant Pot method here), diced avocado, baby tomatoes, red onion and grated cheese (blue cheese would be excellent here too). This crisp and cool salad tasted especially good, poolside on a warm summer day. We all loved it!
I should have taken a picture of the rest of the food that people brought. There was fresh fruit, chips and dips, protein poppers, mini fruit pizza, smore cookies and more. YUM!! We are going to make this a regular event this summer. Good food, and great conversation while the kids had fun in pool! It was a great way to kick off the summer!

Ingredients
- baby spinach
- romaine lettuce, chopped
- crispy bacon, chopped
- hard boiled eggs chopped (try this Instant Pot Method)
- avocado, diced
- grape tomatoes, halved
- red onion, sliced
- grated cheddar cheese (or blue cheese crumbles, or feta)
- ranch dressing or red wine vinaigrette
Red Wine Vinaigrette
- 1/2 cup extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 2 cloves garlic, pressed or finely minced
- 1 Tablespoon Honey
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon freshly-cracked black pepper
Instructions
- Layer spinach and romaine in a shallow dish.
- Next put your toppings in a big pile around the bowl.
- Serve with buttermilk ranch and a red wine vinaigrette
