Description
These Eggnog Pancakes are easy to make, mildly flavored and have the PERFECT texture! Everyone LOVES them!!
Ingredients

5 Tablespoons butter, melted
1 cup eggnog
2 eggs
1 Tablespoon Oil
1 teaspoon vanilla
1 cup flour
1 Tablespoon baking powder
1 Tablespoon sugar
1 teaspoon salt
1/8 teaspoon ground nutmeg
Instructions
- In a small mixing bowl, whisk together the melted butter, eggnog, eggs, oil and vanilla. Add the dry ingredients on top and whisk until combined and smooth. Be careful not to overmix the batter (this makes your pancakes tough).
- Pour a scant 1/4 cup of batter on a griddle set to 375 (or medium high on the stove top). Cook until little bubbles form and pop on the batters surface. Flip and cook for another 2-3 minutes, until both sides are golden brown.
- Repeat with remaining batter. Serve with butter and maple syrup. ENJOY!
