One of my goals for 2024 is to feed my family more wholesome nutrient dense food. Success for me in this area, is all about planning ahead. So every weekend, I plan to create a weekly menu plan first, create list for the grocery store, and prep a couple of good breakfast, snack and lunch recipes too. This weekend I plan to make this wonderful peanut butter granola and applesauce oatmeal muffins. Both are fabulous for a quick meal or a snack on the go!
But let’s talk more about this peanut butter granola! It is a simple recipe that is truly irresistible. It is great on yogurt with some fresh fruit, or just to snack on by the handful. In my opinion, everything is better with peanut butter, even granola! Chocolate and peanut butter together is one of my all time favorite flavor combinations. If you like it too, you could definitely add some mini chocolate chips to this recipe. The chocolate chips is only if you want to really take it over the top. It is almost like a dessert! Just add them after cooling for a few minutes so they don’t melt!
If you want this recipe to be gluten free, make sure that the oats are certified gluten free.

Ingredients
- 2 cups old fashioned oats (use certified gluten free oats if you want )
- 1/2 cup peanut butter natural (or regular melted)
- 1 1/2 tsp cinnamon
- 2 tsp vanilla extract
- 1/2 tsp kosher salt
- 1/4 cup pure maple syrup
- 1/4 cup peanuts (optional)
Instructions

Preheat the oven to 325F.

In a large bowl, add the peanut butter, maple syrup, kosher salt, cinnamon, and vanilla extract.

Stir to combine thoroughly. Fold in the oats and peanuts, if using.

Line a baking sheet with parchment paper, and pour the granola mixture on top. Spread the mixture into an even layer on the baking sheet.

Bake for 25 minutes

Let the granola cool for 30-60 minutes before breaking it into pieces.
