My husband always talks about some Applesauce Oatmeal Muffins that I used to make for him when we were teenagers (we were High School sweethearts). He loved those muffins and while I do remember making them, sadly, I no longer had the recipe. I had to try a lot of recipes to find one that lived up to the ones we remembered, but finally I found it! We both agree that this Applesauce Oatmeal Muffin nailed it!
My whole family LOVES these Applesauce Oatmeal muffins. They are hearty and filling but tender and light at the same time. The perfect muffin to grab for breakfast on a busy morning, to pack in lunchbox for school or work or enjoy for an afternoon snack. These muffins never last long at my house, so I have started making a double batch and putting some in the freezer for later. They freeze beautifully and warm up quickly in the microwave. I like them with a pat of butter or a smear of peanut butter. Yum!
Ingredients in Applesauce Oatmeal Muffins
- Flour (I use all purpose but you could use wheat if you want)
- Oats (I prefer old fashioned but you can use quick oats too)
- Brown Sugar
- Baking Powder
- Baking Soda
- Cinnamon
- Salt
- Egg
- Buttermilk (or you can use regular milk)
- Oil (canola or melted coconut oil)
- Applesauce
- Vanilla Extract

These are our favorite muffins for a reason. Hearty and filling but tender and light at the same time with a wonderful flavor.
Ingredients
- 1 ¾ cups flour
- 1 cup oats old fashioned or quick
- ½ cup brown sugar
- 1 ½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 egg
- ½ cup buttermilk or regular milk
- ¼ cup oil canola or melted coconut oil
- 1 teaspoon vanilla
- 1 cup applesauce
- 1 tablespoon oats for topping, optional
Instructions
- Preheat oven to 375°F
- Prepare muffin tins by spraying with a nonstick spray or lining with paper liners
- In a mixing bowl, combine oats flour, sugar, baking powder, baking soda, cinnamon and salt
- In a separate bowl mix buttermilk(or regular milk), egg, oil and vanilla together
- Add to flour mixture along with applesauce. Stir batter only until the flour is mixed in and no more.
- Scoop batter into prepared muffin tin. I like to use a large size ice cream scoop for this step. Makes them uniform size and it is less messy. This recipe makes 12 standard muffins.
- Top with a sprinkle of oats, if you want. I think it looks nice!
- Bake in preheated 375F for 18-20 minutes until muffins are cooked through
- Cool muffins in pan for 3-5 minutes. Then remove from muffin tin and cool on a baking rack
- Enjoy!

These muffins are amazing! Really appreciate when a recipe is as promised. I did add chopped walnuts and golden raisins. Also, tubanado sugar to the sprinkled oatmeal for the topping. Very much appreciated the option to keep the recipe from fading and without ad’s. Very five star recipe!! Thanks.
