Ingredients

Scale

Batter
1 cup salted butter
1 1/2 cup brown sugar
2 eggs
1 1/2 tsp vanilla extract
1 tsp orange zest
2 cups all-purpose flour
2 tsp cornstarch
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp ginger
1 cup white chocolate chips
1 cup dried cranberries (craisins)

Frosting

8 oz cream cheese, softened
3 oz salted butter, softened
4 cups powdered sugar
2 tsp clear vanilla
1/2 tsp orange zest
1-2 TB cream or milk, if needed

Toppings

1 cup dried cranberries (craisins), chopped
1/2 cup white chocolate

Instructions

  1. Preheat the oven to 350°F (180°C). Line a 9×13-inch baking pan with parchment paper. Set aside.
  2. In a large mixing bowl or with a stand mixer, cream together salted butter and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the vanilla, and orange zest until well combined.
  5. Add the flour, cornstarch, salt, baking powder, baking soda and ginger to the wet ingredients, mixing until just combined.
  6. Mix in the white chocolate chips and dried cranberries.
  7. Spread or press the thick batter evenly into the prepared baking pan.
  8. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the bars to cool completely in the pan on a wire rack.

Frosting

  1. In a medium bowl with an electric hand mixer or with a stand mixer beat together cream cheese, and butter until smooth.
  2. Add the powdered sugar, 1 cup at a time, mixing slowly until completely incorporated. Repeat this step until all of the powdered sugar has been incorporated.
  3. Add the clear vanilla and orange zest, mixing until smooth and creamy.
  4. Adjust the consistency of the frosting by adding the heavy cream or milk, a small amount at a time, until your desired consistency.
  5. Once the bars are completely cooled, spread the frosting evenly over the top.
  6. Sprinkle the dried chopped cranberries onto the top of the frosting.
  7. Melt the white chocolate chips in the microwave (30 second intervals) until smooth. Transfer the melted chocolate to a zip top bag and snip the corner. Drizzle the white chocolate on the top of the bars.
  8. Place the pan in the refrigerator to allow the frosting to set.
  9. Once chilled, cut into squares and then into triangles.
