Menu Plan #9
November 27-December 3, 2023
Monday:
I will use the Easy Skillet Meatballs or Slowcooker Spaghetti Sauce and Meatballs to make yummy sandwiches on toasted rolls with provolone cheese and roasted broccoli on the side. This recipe is so simple and everyone loves it.
Tuesday:
Italian Chopped Salad with Chicken Fresh crispy greens, rotisserie chicken, ripe tomatoes, salty green olives, toasted pine nuts, and the BEST part in my humble opinion…homemade buttery garlic croutons! They seriously make the whole salad for me! Yuummm! A filling and fast dinner for you family. Serve with some fresh fruit like fresh berries, sliced oranges and apples.
Wednesday:
Instant Pot Zuppa Toscana Soup is favorite at our house that you can make in the slow cooker if you prefer (I have directions for either)! Full of potatoes, sausage, cream and kale or spinach. It is warm and comforting soup that is bursting with flavor! Serve with breadsticks on the side.
Thursday:
Honey Lime Enchiladas are one of the most popular recipes on my site and for good reason. They are a fun twist on the classic cheesy chicken enchilada. My family prefers flour tortillas but you can use corn too. You a make this ahead of time and throw in the oven before dinner. I like to serve this with a nice green salad, and some refried beans (either open a can or make some these delicious Instant Pot Refried Beans).
Friday:
Pizza night–this week I am going to make my family these fun Pizza Rolls (roll up like cinnamon rolls but with pepperoni and cheese). Dip in pizza sauce or this 5 Minute Marinara (our favorite)
Saturday:
Date Night–out! Leftovers for whoever is home.
Sunday:
Easy Slow Cooker Pulled Pork served with Macaroni and Cheese (here is an Instant Pot Mac and Cheese if you prefer). Serve with a green salad of your choice and some fresh fruit, or add some Buttermilk Cornbread.
Breakfast Ideas:
Have you ever had the pleasure of an Egg and Grits Breakfast Bowl to start your day off? If you have not experienced this wonderful Southern dish, then let me tell, you are missing out! I like it with Canadian Bacon or ham, but you could use crispy bacon, crumbled sausage or even your favorite sautéed veggies.
Snack & Dessert for the week:
These Peanut Butter and Jelly Muffins are a fun twist on the classic sandwich that everyone loves and more substantial than your average everyday muffin. These are great for breakfast on the run or to pack in a lunch box. They also freeze really well.
Cheesy Artichoke Dip with a Kick It will be nice to have this dip in the fridge this week for dipping veggies and crackers in for an afternoon snack or weekend munchies during football games, movies or games with my boys. It is super good served hot or cold!
