Menu Plan #8
November 13-20, 2023
Monday:
Classic Green Curry Chicken with vegetables. This recipe is so simple and seriously really good!
Tuesday:
Scallops with Lemon Butter are a perfect for a busy school night or a fancy dinner with guests! So easy to make and seriously mouthwatering delicious! Serve it with Creamy Parmesan Rice or a fresh salad like this Zesty Lime Sweet Potato and Black Bean Couscous Salad (this is seriously GOOD)!!
Wednesday:
Lasagna Soup is such a flavorful, warm bowl of comforting goodness. The scoop of cheese topping on top melts and gets gooey and seriously just wonderful! It is one of our very favorite soups! Delish!
Thursday:
These Ham and Swiss Poppyseed Sliders are such a fun hot sandwich that you can make ahead of time and keep in the fridge until you are ready to pop into the oven. They make a great dinner serve with some fresh fruit and veggies (apple slices, carrots and cucumber slices is what I am planning on)
Friday:
Pizza night–My husband offers to “cook” this night and that means ordering pizza locally (haha) but there are lots of fun pizza recipes here if you want to make your own!
Saturday:
Date Night–out! Leftovers for whoever is home.
Sunday:
Cream Filled Crepes or Roll up Pancakes Sometimes on Sunday evenings we just really feel like breakfast for dinner. It feels like such a treat to have a relaxed breakfast together even if it is in the evening.
Breakfast Ideas:
Simple Cinnamon Granola is my boys favorite and a staple at our house. It makes your kitchen smell divine while it bakes and if you want you can add nuts!
Snack & Dessert for the week:
Sourdough Banana Muffins are seriously amazing and you get the health benefits of sourdough. I you don’t have sourdough discard then try these Buttermilk Banana Muffins or easy Kodiak Banana Muffins. All three of these banana muffin recipes are fantastic! Take your pick!
Healthy Chocolate Peanut Butter Banana Smoothie. I am planning to whip this up for my family this week either for an after school snack or an after dinner treat. It is such a delicious smoothie with clean ingredients! YUM!
