Weekly Menu Plan #6
October 30-November 5 2023
Monday:
Creamy Fiesta Chicken Bake is one of the easiest and tastiest dinners I have in rotation. We love Mexican themed food, and It is so easy to make, and the addition of cream cheese is just wonderful! Personally, I think everything is better with cream cheese! Serve with big green salad and some fresh fruit (like sliced oranges-easy and yum!)
Tuesday:
Tuesday is Halloween and we always have our favorite Lumberjack Chili with Buttermilk Cornbread. This chili is FANTASTIC and super easy to make. A classic, perfectly flavored chili that is wonderful topped with Fritos, cheese and even a dollop of sour cream, if you want. I LOVE to crumble the buttermilk cornbread on top. Everyone loves it and I love it because I can throw it into the crockpot in the morning and it is ready to enjoy before trick or treating starts! Leftovers are wonderful for lunch over a baked potato. Also the chili freezes great!
Now if you are in the mood for a chicken chili instead, try Uncle TJs Chicken Chili or Cream Cheese Chicken Chili! Both are excellent choices!
Wednesday:
Ultimate Green Sandwich. Sometimes you just need a super healthy quick and easy dinner (especially after all the Halloween candy from the night before)! My boys have church youth activities on Wednesday nights and they are always in a rush to get out the door, so a sandwich is perfect! I love these vegetarian sandwiches but of course you could add your favorite lunch meat or some crispy bacon! Enjoy!
Thursday:
Perfect Pumpkin Waffles or Pumpkin Pancakes for the win tonight! I am telling you, my boys seriously cheer when we have breakfast for dinner! Serve these wonderful pancakes with the usual eggs and bacon or sausage if you want, and a nice nutrient dense green smoothie. This is our favorite one that we make at some point almost daily (either breakfast, after school snack or with dinner)! It is bright green and seriously tastes amazing. When my boys were little and would have friends come over for sleepovers, I would make our green smoothies in the morning and they were always a big hit. The kids were nervous to try them, but once they did they always loved them! Then, without fail I would get a phone call from their Mom to find out more about this green drink their son loved and is talking about so much! They were usually shocked that they liked it and wanted to start making it. These green smoothies are like a nutritional insurance policy for your kids each day.
Friday:
Pizza night–My husband offers to “cook” this night and that means ordering pizza locally (haha) but there are lots of fun pizza recipes here if you want to make your own!
Saturday:
Date Night–out! Leftovers for whoever is home.
Sunday:
Baked Greek Chicken--A seriously cozy recipe with Feta, tomatoes, olives, and a delicious Greek sauce is one of my favorite dinners! I love to make this warm comforting dish when it is cold and I don’t want to brave the cold weather to grill my other greek chicken recipe, found here. Both are wonderful, but this Baked Greek Chicken recipe is made in the oven, so you can stay in your toasty kitchen! Although, to be honest it is not really cold yet in Tennessee! Ha –wishful thinking, I guess!
I love to serve it with this mediterranean yellow rice. So good!!
Breakfast Ideas:
Overnight Oats–with lots of variations listed in this recipe Make several different ones and have the jars ready to enjoy for your family all week! I also have a chocolate overnight protein oat recipe if you prefer!
Snack & Dessert for the week:
Spooky Spider Nest & Layer Dip is a delicious dip that everyone loves. Make the spider web on top if you are serving it for Halloween! Fun!
Almond Joy Protein Poppers are perfect when you need a little something but don’t want to go for your the kids Halloween candy. This is much better choice!
