Hello friends,
I hope you are having a good weekend. I am currently in Utah for a baby shower for my first grand daughter (due this January). I am enjoying time with my two sons and their wives and my two darling grand sons, who live “out west” as we say in the South.
We have been baking cookies and rolls for the shower. We made the Gourmet S’mores Cookies (a family favorite) and a new recipe I will post soon…Brown Butter Pumpkin Oatmeal Cookies. YUM!

Menu Plan #4
Monday:
Cream Cheese Chicken Soup –this is the most comforting soup. My whole family LOVES it. It is the perfect soup to make for a friend who is under the weather or needs a warm meal for what ever reason. I also think this is good enough to serve for company! It is divine!
Tuesday:
Mongolian Beef- is my husbands favorite dish at PF Changs and he loves this homemade version. Pretty simple and quick to make too! Double the rice you need to use for the Fried Rice on Thursday. Leftover rice is actually better for that recipe.
Wednesday:
Rosemary Honey Mustard Chicken is a delicious dinner that is super easy to make but tastes like it was a lot more work that it was! Serve with baked potato or simple egg noodles. Don’t forget to add a fun salad.
Thursday:
Better than Takeout Fried Rice--really does live up to its name! Your family and friends will think you stopped somewhere to pick it up! Use the leftover rice from Tuesday nights dinner (if you remembered to double the rice) and add any meat or veggies your family likes. We love chicken or ham the best. I like to serve this with some fresh fruit.
Friday:
Pizza night–My husband offers to “cook” this night and that means ordering pizza locally (haha) but there are lots of fun pizza recipes here if you want to make your own,
including this Quick and Easy Pizza using Naan bread as the base.
Saturday:
Date Night–out! Leftovers for whoever is home.
Sunday:
Pot Roast is a classic Sunday family dinner for our family. I actually don’t make it very often but when I do my boys get very excited! I always serve it with wonderful mashed potatoes (they are the best!) and homemade rolls like these quick 30 minute rolls , or my favorite buttermilk rolls, or even these wonderful pumpkin dinner rolls, and green salad or broccoli for some greens:) Such a wonderful family dinner.
Breakfast Ideas:
Creme Brûlée Baked French Toast (I am excited for this–SOOO good!! ) You make it the night before–and it sits in the fridge, ready to pop in the oven the next morning. Making an amazing weekend family breakfast so easy! Add a nice green smoothie to balance out the meal!
Snack & Dessert for the week:
The Best Creamy Bean Dip-perfect for game night or after church on Sunday afternoon! Everyone loves this dip–even people who claim they don’t like beans. Roll some of the leftovers (if there are any) in a flour tortilla for a fantastic bean burrito!
Almond Flour Brownies–I originally started making these for my gluten free son, but you can call me crazy but I actually LOVE them! Try them out for a change or stick to these Perfect One Bowl Brownies. Either way you can’t go wrong! They both freeze beautifully! I like to keep them in the freezer to pop into lunches during the week or a have a treat when needed:)

Mel…I have been delighted with your blog for years as your boys have grown up. Your recipes are delicious but what speaks more to me, besides the beautiful and creative tablescapes and photography, is the love and dedication to family that comes through from your tribute to your mom to family news. My loved ones are scattered to many places now, and the days of clamoring for the last bite are few, but I relive those days fondly being part of your blog. Thank you for sharing..it brightens my day!
