I have been working hard getting this website cleaned up so hopefully all the posts that were not loading properly will now. If you come across a problem–please shoot ne an email or leave me a comment. I originally posted Cowboy (coffee) Cake recipe back in 2009 and felt in needed to come out of the archives! This cowboy cake (coffee cake) is a family favorite and was a staple when I was raising my five boys. I am really not sure how it got the name of Cowboy cake but I think that may have added to it’s charm for my boys. They all LOVED this coffee cake and would come running when I announced it was for breakfast. It is a super simple and basic brown sugar and cinnamon cake that just hits the spot. You could add some pecan or walnuts if you like nuts, but sadly, my husband and boys are not fans! They think that nuts just ruin baked goods! Silly boys! Personally I think nuts would be fabulous sprinkled on top before baking.

Ingredients to wrangle up for this Cowboy (coffee) Cake:
- flour
- butter
- brown sugar
- cinnamon
- salt
- eggs
- baking soda
- buttermilk
There you have it, partners! A Cowboy Coffee Cake that’ll make your taste buds do a Texas two-step. All the silly cowboy jokes aside, you really will love this recipe! Maybe it will become a family tradition for you too!

Description
This is a basic but wonderful brown sugar coffee cake that my boys grew up on! They all loved it!!
Ingredients
Preheat oven to 350 and spray a 9×13 baking pan with nonstick spray
Combine the following in a bowl:
2 ½ c. flour
1 ½ c. brown sugar
2 tsp cinnamon
With a pastry cutter mix in :
½ c. butter (cold)
**Reserve ½ c. of the above mixture for top of the cowboy cake.
Then to the remaining mixture add the following ingredients and mix:
¼ tsp salt
2 eggs
½ tsp baking soda
1 c. buttermilk
Mix just enough to combine fully but do not overmix.
Pour into a 9×13 pan. Sprinkle top with reserved ½ c. crumbly mixture.
Bake at 350° for 25–30 minutes or until toothpick comes out clean.

Could you please elaborate on the directions a bit? I am not sure how to stir up the first part of the recipe with the flour, butter, brown sugar, and cinnamon. Do we do that in a mixer with a paddle attachment, or do we cut the butter in with a cutter? I’m just not clear.
