What are Instant Pot Egg Bites?
Have you ever tried Starbucks sous vide egg bites? I did once when one of my cute preschoolers gave me a Starbucks gift card. Since I don’t drink coffee, I was drawn to the food part of the menu and found these. They are delicious! Light, fluffy and full of flavor. Of course I wanted to re create them in my kitchen and so I did some recipe testing. Don’t worry if you don’t have a fancy Sous Vide machine, neither do I! You can make these without it! You can get the same fluffy creamy results cooking them in your instant pot. They are not only a very tasty breakfast, but these instant pot egg bites are packed with protein, something that helps keep you feeling full a lot longer than a bowl of cereal. So skip the long Starbucks line, save money, and customize them to your tastes by making them at home!

What you will need:
*Instant pot (you can cook these in the oven using a regular muffin pan (but the texture will not light and fluffy)
*Silicone Egg mold–as shown above. These also work great for freezing small amounts of stuff (sauces or baby food)
*Tinfoil– to cover the silicone mold before insetting in the Instant Pot
Perfect Meal Prep Recipe
These Instant Pot Egg Bites are seriously perfect to meal prep for a busy work week with early start times. This recipe is easy to double. You can stack the egg bite molds on top of each other and cook at once. They turn out GREAT! I almost always double this recipe because I love to have them handy to grab and go on a busy morning.

Description
Instant Pot Egg Bites are tender, fluffy, packed with flavor and super easy to make. They are a wonderful make-ahead breakfast, and much better than the egg bites you get at Starbucks.
Ingredients
Basic Egg Bites Recipe:
4 large eggs
1/3 cup cottage cheese
1/4 tsp salt
1/4 tsp pepper
Cheese and Chive
1/4 cup grated cheddar cheese
2-3 Tablespoon chopped chives or green onions
Bacon and Grueyere
1/4 cup chopped crispy bacon
1/4 cup shredded Gruyere Swiss cheese
Ham and Cheese
1/4 cup diced ham
1/4 cup cheddar cheese
Red Pepper and Jack Cheese
1/4 cup chopped roasted red pepper
1/4 cup pepper jack or Monterey Jack cheese
2 – 3 Tablespoons chopped spinach
Instructions
- In a blender, place the eggs, cottage cheese, salt and pepper and blend until smooth.
- Divide the chosen fillings (cheese, meats and/ or veggies) evenly between the egg bite mold. Pour the egg batter into the egg molds, dividing the mixture evenly. Each egg mold should be filled about 3/4 full.
- Cover tightly with tin foil.
- Pour 1 1/2 cups water into the the inner pot of the pressure cooker and place the metal rack inside the inner pot. Place the egg bites mold on the rack, stacking the molds if you want to double the recipe. A double batch cooks perfectly stacked on top of each other.
- Place the lid on the inner pot and be sure the oven know is sealed. Set the cook time for 9 minutes on high pressure Do this by hitting manual or pressure cook and use the +/- button to adjust to read 9.
- Once cook time is done, let the pressure release naturally for 10 minutes.
- Remove the egg bite mold from the inner pot and let rest for few minutes before inverting the egg bites onto a plate.
Notes
- Have fun with the flavor combinations! Keep in mind the rule of thumb–1/4 cup of any cheese and up to 1/3 cup of meat or vegetable.
- The recipe can easily be doubled and cooked in 2 molds stacked on top of each other in the instant pot. Just cover both molds tightly with foil
- Greasing the mold is a good idea to guarantee easy removal!
- Storage–Egg bies will keep in the fridge for 5-6 days. They can be frozen but it will change the texture when you defrost them.
- To Reheat- it is best to reheat these egg bites at 50% power in the microwave for 1 minutes. The lower heat will help preserve the delicate fluffy texture.
