Happy Monday everyone!
A new week has begun and I am here for it. I have my menu planner all filled out and ready to go. I have a couple of new recipes that I am trying this week too, so I will share them soon, if they are good! It is officially fall and the start of soup season, in my book. I LOVE soup! In the colder months, especially! It makes a cozy dinner paired with our favorite quick breadsticks or easy buttermilk cornbread. This week I am making this ‘Slimming Turkey Kale Soup’ from my Food Babe Kitchen cookbook. It is simple, healthy and really hits the spot.
At lunch I am looking for a filling, nutritious meal and this Slimming Turkey Soup fits the bill perfectly! This soup is so easy to make, freezes great and heats up beautifully.

Ingredients
- 1 TB olive oil or avocado oil
- 1 pound ground turkey
- 2 garlic cloves, minced
- 3 celery sticks, diced
- 2 carrots, diced
- 1 yellow onion, diced
- 1 tsp red pepper flakes
- 1 TB Italian seasoning
- 2 tsp sea salt
- 1/2 tsp ground black pepper
- 2 cups chicken broth
- 2 cups water
- 1 bay leaf
- 2 cups chopped kale
Instructions
- Heat the oil in a pot over medium heat. Add the turkey and cook 3-4 minutes or until slightly browned.
- Add the celery, carrots, onion, red pepper, italian seasoning and salt and pepper. Cook for 5 more minutes until vegetables are tender.
- Add the garlic and cook for 1-2 minutes.
- Increase the heat and add the chicken broth, water and bay leaf. Bring to a boil and reduce heat. Simmer for 20 minutes.
- Remove the bay leaf and add the kale 5 minutes before serving.
