This summer Whitney (my soon to be second daughter in law) and I made this wonderful Fresh Corn Salsa. It is pretty much the epitome of SUMMER. Don’t be turned off with all the chopping, just grab a friend or family member to be with you, or put on some of your favorite music. All the chopping gave us plenty of time to visit and laugh. It was super fun to make and eat!
What you need to make Fresh Corn Salsa:
Corn (we used fresh, but frozen works too)
Avocado
Sweet Bell Pepper (orange or red looks best)
Red Onion (sweet onion works well too)
Cherry Tomatoes (roma tomates would work too)
Cilantro
Cucumber
Lime Juice
Salt and Pepper
How to Eat it:
I like to eat this as a salsa with salty chips, but its is equally good as a side dish or on top of grilled chicken, steak, fish or pork tenderloin. It is also fabulous on tacos or on top your salad. All the fresh ingredients come together for an absolutely irresistible recipe. I am sure you will find many ways to enjoy it!

This dip is bursting with all the flavors of summer and packed with lots of nutrients.
Ingredients
- 1 cup corn use thawed, frozen corn or corn on the cob, cooked or raw
- 1 cup cherry tomatoes, halved
- ¼ cup red onion, diced small
- 2 tbsp fresh lime juice
- ½ bell pepper, red, yellow, or orange, diced small
- 1 small avocado, diced
- 1 ½ cup cucumber, diced
- 1 cup loosely packed cilantro, chopped
- ½ tsp kosher salt
- pinch of pepper
Instructions
- Combine everything in a large bowl.
- Use as salsa for chips, tacos, add to rice bowls, or on top of grilled meat.
- ENJOY!
