Why make Easy Pancake Bake?
Who wants to sit over a hot griddle all morning? During the school year we are always in a big hurry to get out the door and leisurely breakfasts are not going to work. Then in the summer, we may have the time but no one feels like standing over the hot griddle flipping pancakes all morning. You may think I sound lazy, but I think I am just being smart! Haha! There are mornings when I LOVE making our favorite buttermilk pancakes or sourdough pancakes and then there are mornings when I am so happy for this Easy Pancake Bake recipe!
Versatility of the Easy Pancake Bake
You can use any pancake mix for this recipe but I like to use the high protein Kodiak Cakes Mix ( I usually get it at Costco). It works great in the recipe and keeps us full for hours with the added wholegrain and protein. I normally use plant milk (almond, coconut or cashew) but regular dairy milk is great too.
You can add some fresh fruit before baking if you want but we like to serve it as a topping after with some drizzled nut butter. Bananas and mini chocolate chips, diced apples and toasted pecans, fresh berries and whipped cream—-so many options!!
Great for Meal Prepping
This is a great recipe if you like to meal prep. I have made a double batch of this Easy Pancake Bake on the weekend and then had breakfast all ready to go that week. Simply heat in the microwave and top as desired! Yum! Easy, healthy and so delicious! I hope you enjoy this as much as we do!

Ingredients
- 1 cup pancake mix ( I use Kodiak Cakes Buttermilk)
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup almond milk cashew milk or regular dairy milk
Instructions
- Preheat the oven to 350F.
- Liberally spray a pie plate or baking dish with cooking spray.
- Combine all ingredients, whisking to eliminate clumps, and pour into the baking dish.
- Bake for about 25 minutes or until a toothpick comes out clean.
- Cut into four servings.
