This Chewy coconut Almond Chex Mix is so good, and it is seriously addictive! Let me tell you, it is dangerous stuff to have around! I dare you to stop with just one bite! My boys and I think it may be humanely impossible. I made a big batch this last Sunday and realized that I have I never posted this fun recipe. I was a little low on almonds, so I threw in some Hershey’s chocolate Easter eggs, which we all agreed was a great addition. You could make this treat very festive by adding M&Ms that go with whatever season you are in. This made a fun easter treat with the pastel chocolate eggs! But we also like it at Christmas time with red and green M&Ms!
I am sure you recognize this treat from parties and gatherings. And have you noticed it is always called something different…Oooey Gooey Cereal Stuff, Christmas Crack, Moose Munch, Puppy Chow…and the list goes on. Whatever you call it, this stuff is GOOD! My family loves it with just Chex cereal because that is gluten free ( and one of my boys has Celiac disease). If you are not gluten free, you can substitute half the Chex cereal for Golden Grahams. Either way, you will love it! It comes together quick, and has the perfect amount of sweetness and crunch. My boys are always genuinely sad when it is gone!

You will need a big bowl like this one to make this recipe. And it is under $5!!

Ingredients
- 5 1/2 cups Rice Chex
- 5 1/2 cups Corn Chex (or substitute Golden Grahams)
- 1 cup sliced almonds
- 2 cups unsweetened coconut
- 3/4 cup (1 1/2 sticks) butter
- 1 cup sugar
- 1 cup light Karo syrup
- 1 teaspoon vanilla
- 1 cup M&Ms or other chocolate candies
Instructions
- In a VERY large bowl, or use a cookie sheet, combine cereals, almonds, and coconut. Set aside.
- In a saucepan, combine butter, corn syrup, and sugar creating a light colored syrup. Bring to a boil, then reduce heat and cook for 3 minutes. Remove from heat and stir in the vanilla. While the syrup is still hot, pour over the cereal mixture and stir well to evenly coat the cereal. Stir in M&Ms if desired. Serve in a large bowl or divide into individual portions.
