Hello Friends!
Today is the first day of school here in Chattanooga. It was strange only sending off two boys this year. I now have 3 boys going to college in Utah (1 at Utah State and 2 at BYU)! It was also weird to send my boys off wearing face masks, but at least they get to go. They were very excited for school, since we have been out since last March! In years past I have had fresh baked cookies waiting for my boys after the first day of school. I always welcome an excuse to make cookies (my favorite treat) but today I am not in the mood to roll out and bake a bunch of cookies, so I think I will make these Snickerdoodle Blondies. I tried them for the first time this summer and my family is hooked! So yummy and so easy! Win win!!
These snickerdoodle blondies are so easy to make, yet still packed full of that wonderful buttery cinnamon flavor of the classic snickerdoodle cookie that we all love. I can really appreciate a good bar cookie when life is busy. There are times, when I want to make cookies but don’t have a lot of time. It’s so nice to simply smash the dough in a pan, bake it all at once and be done!
A few notes about this recipe:
*These blondies are SO good, but they are rich, so cut them small. A little goes a long way!
*After they come out of the oven, resist the urge to dig in. They will develop an irresistibly wonderful crispy exterior and chewy center as they cool.
*I use cane sugar for the topping in this recipe. I think it adds a nice crunch but regular granulated sugar will work just fine!
* This recipe makes a lot (cut small) and they freeze great! So you can save some for later!

Ingredients
- *3 sticks softened butter (I use salted butter)
- *3 cups brown sugar
- *3 eggs
- *1 1/2 Tablespoons vanilla
- *1/2 teaspoon baking soda
- *1 1/2 teaspoons baking powder
- *1 teaspoon cinnamon
- *3 cups flour
- TOPPING:
- *2 teaspoon cinnamon
- *3 Tablespoons cane sugar
Instructions
- Preheat the oven to 350° F and grease a 9×13 inch baking dish.
- Beat the butter and brown sugar together for 3-4 minutes, using a handheld or stand mixer.
- Add eggs, one at a time, then stir in vanilla, cinnamon, baking soda, and baking powder. Mix well.
- Add flour and gently mix, just until combined (do not over mix at this point!).
- Spoon the batter into a prepared baking dish and spread evenly.
- Combine the sugar and cinnamon topping and sprinkle evenly over the top.
- Bake for 32-38 minutes, depending on your oven (should be set in the middle and crispy edges). The edges will puff up more than the center.
- Allow to cool before cutting. Once it has cooled, the bars will have a delicious and chewy texture. These are rich, so I cut small. Enjoy!
