I am so excited to share this wonderful and simple recipe for Overnight Sourdough pancakes or waffles. They are a new family favorite! This whole Corona Virus pandemic has been strange and difficult in many ways, but I am thankful for the extra time at home with my family. We have all of our boys home now, including my oldest son and his wife. It is wonderful to all be together again. I have especially loved gathering my family for meals. Delicious food and lively conversation is good for my soul. With all the extra time, I have been having fun with my sourdough starter. Do you have a sourdough starter sitting in the back of your fridge? If you don’t already have one…you should get one! An easy way to get a start quickly is to request it from your online friends. I did that and was offered one that same day. You can also order one online. I know that King Arthur Flour sells them. I have ordered one from them before. Also you can make your own! Should I do a post about making your own sourdough starter? It takes a couple of weeks to establish a healthy sourdough starter but is pretty simple to make if you have the patience. If you live close to me ( I’m in Chattanooga), I would be more than happy to share some of my sourdough starter with you!
Sourdough has been around for centuries and is much healthier for you than regular bread. The fermentation process improves its nutrition profile in several ways including increased mineral absorption, easier to digest and sourdough bread does not create a spike in your blood sugar like normal bread does. You can research it and see all the health benefits yourself—it is impressive! I have enjoyed making lots of different breads, muffins, pizza dough and more using my sourdough starter. I will start sharing our favorites! In my house, these overnight sourdough pancakes and waffles are the most requested, so I decided to share them first.
You start the batter before bed and then in the morning finish it up while the griddle or waffle iron heats up. So easy and SO delicious!! Seriously, we all LOVE this recipe!

Perfect Buttermilk Pancakes
Whole wheat Blender Pancakes

Overnight Sourdough Pancakes or Waffles
Ingredients
The night before:
- 1 cup (approx 240 grams) sourdough starter, active*
- 1 cup milk (any kind–I like buttermilk best but plant based milks are great too)
- 1 cup unbleached all-purpose flour (you can use half whole wheat)
- 1 tablespoon brown sugar
The next morning:
- 1/4 cup butter, melted and cooled
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon baking soda
Instructions
The night before:
- Whisk together the sourdough starter, buttermilk, flour, and brown sugar until smooth. Cover and let sit on the counter overnight or 8-12 hours.
The next morning:
- Add the butter, egg, and vanilla and whisk into the overnight sponge.
- Sprinkle the salt and baking soda on top of the batter. Whisk until incorporated.
- To cook the pancakes or waffles:
- While you’re mixing together the batter, preheat your waffle maker or griddle for pancakes.
- When you’re ready to cook, drop spoonfuls of batter on hot griddle for pancakes and flip over when lots of bubble appear on top. If making waffles, follow the directions for your waffle maker.
- Keep pancakes or waffles warm on a cooling rack-lined baking sheet in a 200 degree oven.
Recipe Notes
- *Active starter means that it has been fed about 8 hours beforehand. I like to feed my starter Friday morning, mixi up the sponge Friday night, and cook the pancakes or waffles Saturday morning.

Will be making these soon. I made my own starter a few months ago and have used it several times for Dutch oven bread and banana bread. Sourdough can be tricky at times…..failures along with success. I would love to hear your thoughts about it and what you have learned while working with it.
By the way, your son served his mission here (Keller Tx) and it was pleasure to know him.

Made these for breakfast and they were so easy and delicious!! I doubled the recipe for my big-eater family and it made 10 big Belgium waffles. I also didn’t have buttermilk and used almond milk instead and it was still perfect. Yum!!
