Sorry I have been missing for a couple of weeks. My family has had some health issues and trials lately. I think things are looking up–but it has been rough month. It is so hard to see people you love not feeling well–it is not good for my heart! Anyway, I am back with a promised recipes for my gluten free friends…. Easy Gluten Free Cinnamon Rolls (from a mix) that are fabulous!
Believe it or not, this Bob’s Red Mill pizza crust mix makes the BEST GF cinnamon rolls (according to my son with celiac disease). And they are so much easier to make than other recipes that I have tried! Now I like to keep this mix on hand for when the cinnamon roll craving hits!
Let me walk you through it! I used my Bosch mixer this time, but you don’t have to use a stand mixer. You can get the same results by hand it will just take a little more effort and time.
The recipe suggests using a wax paper with rice flour on top, but if you have a silicone baking mat (like the one pictured below), use that. I think it works better. Here is an inexpensive silicone mat like mine on Amazon.
Make sure to keep your fingers wet as you work with the dough to flatten it out. Then brush with melted butter, sprinkle on the cinnamon sugar mixture and carefully roll up.
I use my handy scraper (here is one like mine–love it!) to cut the dough into rolls.
Place in prepared pan and allow to rise. Although–we didn’t get a good rise in the ones pictured–not sure why! Oops! My son who is gluten free must have been impatient that day.
He LOVES these cinnamon rolls and gets so excited when I make them. If you have anyone in your life that is gluten free, you can now pretty easily make cinnamon rolls! Finding this recipe was a happy day for us! YUM!!

Ingredients
- 1/4 cup Unsalted Butter
- 1/2 cup Sugar
- 2 Eggs *
- 2–1/4 tsp Yeast Packet (from package)
- 1 cup Water (warm)
- 3–1/4 cups Gluten Free Pizza Crust Mix
- White Rice Flour or Organic White Rice Flour (as needed for dusting)
Filling
- 1/4 cup Unsalted Butter (melted)
- 1/2 cup Brown Sugar
- 2 tsp Ground Cinnamon
Instructions
Dough:
- Preheat the oven to 375°F.
- Add 1 Tbsp of the sugar to the warm water. Sprinkle the yeast packet on top of water and let sit 5 minutes. Cream together the butter and sugar. Add eggs, one at a time, making sure to blend in completely.
- Add the yeast mixture to the butter/egg mixture and blend. Add in the pizza crust mix; blend two minutes. Heavily dust a 2-foot long sheet of wax paper with rice flour. Spread batter over the length of the wax paper, about 19 inches. Using warm water, wet your hands and press the batter outward to fill the sheet. Keep your hands wet. Once the batter evenly covers the wax paper, brush melted butter over the batter from edge to edge.
Filling:
- Combine the cinnamon and sugar and then sprinkle mixture over the batter from edge to edge. Pick up the short end of the wax paper and begin carefully rolling the batter over itself like you would a jelly roll. Cut the roll into 1 1/2 inch pieces and gently place the disks into the 9 x 13 inch greased pan. It is okay to crowd them.
- Let the rolls rise in a warm place for 30 minutes. Bake for 20 – 25 minutes. Remove from oven, cool until the butter stops bubbling then flip out onto a plate. Make 8 cinnamon rolls.

I am sorry for the confusion. BUT thank you for the message! I have fixed the link and added the 9 x 13 pan instead of the smaller size. It does say 19 inches already in the recipe directions–but maybe you missed that. I really hope your cinnamon rolls turned out delicious for you! xoxo

Thank you for the recipe! I wouldn’t have known about this alternate use for the pizza crust mix. I had a few issues though. It says 8×8 pan – I started with that and then it was obvious that there was no way they’d fit. I didn’t think your picture showed an 8×8 and I should have gone by that. Silly me – and I now have more dishes to clean. Your recipe doesn’t give a size to roll it out to – and the link to your silicone mat doesn’t work. So I just guessed based on the size of my silicon mat – but when I checked the Bob’s site it says around 19 inches. Mine is 16 inches – so my dough is thicker. Guessing I’ll add bake time and hopefully they won’t come out too stodgy in the middle. I’ll report back after they’ve baked!
