Happy Spring friends!
We are just coming off a very full Spring Break! My husband and I spent half our time enjoying snow in the Utah mountains for a couple days with our oldest son and his fiancé (who are attending university at Utah State) and then the rest of the break in the Florida sunshine with our younger boys! Their breaks from school did not line up, but I am not complaining!

Two very different climates but both beautiful and so fun to spend with our sweet boys! Although I thoroughly enjoyed our extended Spring Break this year, I am looking forward to getting back to real life again. First order of business is a new weekly menu plan and a shopping list. Nothing helps me get my week off to a good start more than getting our meals organized.

Monday:
Meatball Subs
(made from leftover meatballs from Slower Cooker Spaghetti and Meatballs recipe here)
*Also I have made Meatball sandwiches using vegetarian meatballs. I got them at Aldi’s and my boys all loved them!!

Slow Cooker Ham and Potato Soup and Quick Buttermilk Cornbread
(Seriously the BEST ham soup!! and so easy too!)
Friday:
Friday is always pizza night at our house! My boys LOVE any pizza–even these Quick and Easy Pizzas (semi homemade)! YUM! I to plan serve it with some fresh veggies and our favorite Ranch dressing for dip.
Saturday:
Date night for Mom and Dad. Boys get some leftovers or a green smoothie and nachos:) Which is actually a favorite meal that they can make for themselves! My boys actually like green smoothies –I have made them almost daily for years and now they ask for them!
Sunday:
Perfect Buttermilk Pancakes Or Whole Wheat Banana Pancakes
