Happy 2019 everyone! Did you have a happy holiday season?! I hope so! I don’t know about you, but after all the indulging in Christmas goodies all month, I am ready for some wholesome, healthy foods to start out this new year. One of my resolutions, is to eat a more plant based diet. I have always been interested in nutrition and enjoy reading the lasted research. Have you heard of the the New York Times bestseller book ‘How Not To Die’? Have you read it? It is a very interesting book, all science research based about the role of diet in preventing, arresting and reversing our current top 15 killers. Once again, I was reminded of the power health benefits of a plant based diet. If you don’t have time to read the book, I would suggest listening to some of his podcasts found here on Nutritionfacts.org. The podcasts are usually only about 15 minutes long and packed with great information. I think it is so cool that it is a non profit organization and the proceeds of his books go to charity. So—there you have a little food for thought!
So with that in mind, I am trying to feed my family a lot more plant based, wholesome, but yummy food. This Instant Pot Applesauce has fit the bill and been a huge hit at my house! It takes minutes to make and is wholesome and tasty! I like to leave the peels on (so fast to prep) and then we get all that extra fiber. Simply use a hand held emulsion blender, or a high powered blender (I linked to the ones I have) to puree it when it is done cooking. This Instant Pot Applesauce is quick, easy, bursting with flavor and wholesome! This has become a staple at my house. We like it on top oatmeal, or with toast for breakfast, as a refreshing after school snack or a bowl with our dinner at night! I think you will find lots of ways to enjoy this wonderful Instant Pot Applesauce!

Instant Pot Applesauce
Ingredients
- 3 pounds apples cores removed (unpeeled)
- 1/3 cup water
- pinch of salt
- 1 tablespoon lemon juice (optional–it brightens the flavor)
- 1–2 teaspoon cinnamon (optional but we love it!)
- 1 Tablespoon pure Maple Syrup (optional if you want more sweetness)
Instructions
- Wash apples thoroughly (especially if you are not peeling them), core and quarter them. Place apples, water and lemon juice in the instant pot. Close/seal the pot and set on the manual High Pressure for 10 minutes and press start.
- At this point you can stain out the peels if you don’t want them or just blend them up along with the remaining apples with an immersion blender or in a high powered blender.
- Let cool before transferring to different storage containers. This will keep for about 10 days stored in the fridge or about 2 months in the freezer.
RECIPE NOTES
*Have Fun–For the base of this recipe you only really need two ingredients: water, and apples. You could change things up with different varieties of apples, and try different spices that you like. Sprinkle in a little cardamom, add a cinnamon stick and/or vanilla bean before cooking (don’t forget to remove these before blending though), nutmeg etc. Let me know if you find a killer combo!
*Use the ugly apples–This is a perfect way to use those apples are not the shiniest, or firmest apples. Many grocery stores have a spot that they sell all the ugly/bruised fruit at a lower price since most people don’t want it. You can get them super cheap and they will make fantastic applesauce!
*Crock Pot will work–Don’t worry if you are not an instant pot owner! You can make this in a slow cooker just the same. Cook on low for 6-8 hours.
*Freezer Friendly– This will keep in the freezer for about 2 months.
