Description
Cinnamon Sugar Muffins made with Kodiak Cakes mix. These muffins are not only incredibly delicious but also a wholesome option to kickstart your day.
Ingredients

- 2 cups Kodiak Cakes Power Cakes Mix ( use gluten free one if needed)
- 1/4 tsp salt
- 1/2 tsp baking powder
- 2 tsp cinnamon
- 1/2 cup brown sugar( or maple syrup)
- 1 eggs, or 3 egg whites
- 1 cup milk (almond milk works great)
- 1/4 cup softened butter (not melted)
- 1 tsp vanilla
For the topping:
- 1 tsp cinnamon
- 2 tsp sugar
Instructions
- Preheat oven to 350 prepare muffin pan if needed with liners ( I like to use a silicone one that doesn’t need any preparations)
- In a large bowl, mix together the muffin ingredients until a batter has formed.
- Evenly spoon batter into each muffin cup, filling about 3/4 full.
- In a small bowl, mix together the cinnamon and sugar. Sprinkle the mixture over the batter in each muffin cup.
- Bake for 17 minutes, or until the muffins are firm to the touch and a toothpick inserted in the middle comes out clean.
- Cool for 3 minutes in the pan, then remove and finish cooling on a cooling rack.
- Store in an airtight container in the fridge for up to a week, or in the freezer for several weeks!
