Today I have some inspiration to make a week of delicious dinners, easy for you! This is actually Menu Plan #12, so if you want more ideas, see other plans here. I used to always post these plans on Monday, but I realized that I usually work 0n my menus on the weekend so I can be prepared for the upcoming week. Is that when you do it too? With that in mind, I am going to post these menu plans on Friday or Saturday.
How do you feel about menu planning? I find that my weekly dinners go so much better when I have a plan in place! I am pretty passionate about the importance of family dinner and studies have been done that prove it! I researched this topic for a class I taught called “The Importance of Family Dinner” read more here. I want to have a reason for my family to gather every evening to visit, laugh and eat together. The work it takes to create this daily tradition is worth it! I only get overwhelmed with cooking dinner when I don’t have a plan and feel stressed with the pressure of hungry people all around me! Ha!

Menu Plan #12
Monday:
Instant Pot Zuppa Toscano Soup (or Slow Cooker–recipe for both)
Serve with Baguette (easy fast and SO good!)
Tuesday:
Classic beef tacos using this great homemade Taco Mix (lots of fun Taco recipes here)
Serve with chips and Minute Salsa and some fresh fruit.
Wednesday:
Pumpkin Curry with Shrimp or Chicken
Serve with jasmine rice, and Steamed Broccoli with Lime Dressing (using butter).
Thursday:
Red Beans and Rice
Serve with green salad with Shallot and Mustard Vinaigrette (the BEST)
Friday:
Pizza Twists (Friday is always Pizza night for us other pizza recipes here)
Serve with homemade Buttermilk Ranch Dressing (we have this recipe tapped to the inside of our kitchen cabinet–it is a family favorite!)
Saturday :
Out and leftovers for boys!
Breakfast or Saturday snack: Pumpkin Oatmeal Muffins with a streusel topping (to die for!)
Sunday:
Classic Pot Roast
Serve with Wonderful Mashed Potatoes, Buttermilk Rolls (dough can be made days ahead of time) and Wedge Salad.
Dessert: Fresh Apple Cake
