I love these Peanut Butter Banana Baked Oatmeal Bars so much! They are perfect for weekday mornings when your family is needing a good wholesome, hearty breakfast fast! These Peanut Butter Banana Baked Oatmeal Bars provide lots of quality ingredients that will keep you full and energized until lunch! I like to make these the night before and then in the morning eat a square chilled straight from the fridge on the go, or warm it for 30 seconds in the microwave and enjoy it with a sprinkle of fresh berries, if you have more time. Either way is fantastic! The melted peanut butter drizzled on top is my favorite! I have also made a batch on the weekend, allowed it to cool completely and then cut it into squares and popped them into the freezer. I love to have fun nutritious breakfast options for my family during the week, that don’t take forever to prepare.
This recipe is easily made gluten free if you use certified Gluten Free Oats!

Ingredients
- 1 ½ cups quick cooking oats (use Gluten Free Oats to make this recipe Gluten Free)
- 1 tsp baking powder
- ½ tsp sea salt
- 1 tsp ground cinnamon
- 2 overripe bananas mashed
- ¼ cup creamy peanut butter
- 1 tsp vanilla extract
- ¼ cup pure maple syrup
- 1 large egg lightly beaten
- ¾ cup unsweetened almond milk (vanilla almond milk is great in this recipe)
- Topping:
- ¼ cup creamy peanut butter melted
Instructions
- Preheat oven to 375 degrees F. Grease a 9×9” square baking pan and set aside.
- In a small bowl mix together the quick cooking oats, baking powder, sea salt and ground cinnamon. Set aside.
- In a large bowl mix mashed banana and peanut butter together until combined.
- Add in the vanilla extract, maple syrup and egg. Mix until combined.
- Add the almond milk and stir until well combined.
- Add dry ingredients to wet ingredients and mix thoroughly.
- Pour the mixture into a lightly greased 9×9” baking pan.
- Bake at 375 degrees for 25 minutes. Or until the top slightly springs back when touched and the edges are just barely brown!
- Melt the extra peanut butter and drizzle on top!
- Cut into squares and enjoy!
- Store in refrigerator, reheat in microwave or enjoy cold!
