Have you ever had pickled onions? They are my new favorite thing! I made them with tacos in mind but have found SO many more uses for them! These Super Easy Pickled Onions are, of course fantastic on tacos, but they are equally delicious on sandwiches, grilled burgers, vegetarian wraps, paninis, salads, pulled pork sliders, omelets, nachos and more! Really, the sky is the limit!
Soaking red onion in a bath of water, vinegar, and a little salt and sugar does something magical to them! There is no longer that strong overpowering taste, but a nice tangy crunch that adds so much wonderful flavor to everything! I am telling you…they are SOOO yummy!!
I now keep a bottle in my fridge at all times and find reasons to use them everyday! I decided these pickled onions needed their own post since I am convinced that you can add them to almost anything and it will taste better! They only take 5 minutes to make and will change your life for the better–I promise! xo

Super Easy Pickled Onions
Ingredients
- I red onion thinly sliced (remove tough outer peel first)
- 1 cup warm water
- 1/2 cup apple cider vinegar
- 1 Tablespoon sugar
- 1 1/2 teaspoon kosher salt
Instructions
- Combine water, vinegar, sugar and salt and whisk together until sugar and salt are dissolved.
- Place sliced onion in a mason jar (or bowl that has a lid). Pour the water vinegar solution over onion,.
- Allow jar to sit at room temperature for at least an hour, but preferable overnight in the fridge.
- Pickled onions will last for weeks stored in the refrigerator.
- Use the pickled onion on tacos, sandwiches, burger, salads, paninis, nachos and more!

That is a good question. Although table salt is perfectly safe to use in pickling, it is not recommended because the quality of pickles may suffer due to its additives. There are anti caking additives etc. Sea Salt would be better to use if you don’t have kosher salt. Hope that helps!
