Description
A unique overnight oat breakfast dish with berries, nuts and yogurt. It is perfect for busy mornings when you still want to eat healthy.
Ingredients

- 1 cup uncooked old-fashioned rolled oats (use certified gluten free if you need to)
- 3/4 cup milk (you may need more or less–just enough to cover the oats)
- ¾ cup vanilla yogurt (a single serving of regular or greek)
- 2 Tbsp dried cranberries
- 1 Tbsp dried currants
- ½ of an apple, chopped (I like Granny Smith in this dish)
- ½ of a ripe banana, chopped
- Dollop of yogurt to top each serving (if desired–it looks pretty)
- 1 Tbsp toasted almonds, chopped
- ¼ cup each sliced fresh strawberries and fresh blueberries
- Optional sweetener if needed: Depending if what type of yogurt you use and according to your tastes…maple syrup, brown sugar, coconut sugar.
Instructions
- In a medium-sized bowl, soak oats in milk (covered) in the refrigerator over night.
- In the morning, drain and discard any remaining liquid. Stir in ¾ cup yogurt, dried fruit, banana and apple. Add optional sweetener if desired.
- Before serving, spoon a dollop of yogurt on top of each serving and sprinkle the berries and toasted almonds over the top.
