We have officially kicked off summer at our house, here in Tennessee. My boys are out of school and in full summer break mode. It is so fun! Yesterday we hosted our first summer gathering, with some friends over for a little backyard Luau and swim party for Memorial Day. The menu included Kaula Pork (with a fun sauce that I will post soon), Coconut Rice, fresh fruit, our favorite Buttermilk Rolls and more. All the food was delicious but I think one of the biggest hits of the evening was this Pina Colada Raspberry Punch. It is light, refreshing and has a wonderful flavor, without being overly sweet. Everyone enjoys this punch! I love that it is super easy to make and looks so pretty in a big glass jar or punchbowl! It really is the perfect drink for your gatherings this summer.
