Ingredients

  • 2 cups Kodiak Power Cakes (I use the Kodiak Gluten Free mix)
  • 1 cup Milk
  • 1 Egg
  • 1/2 cup Brown Sugar
  • 1/4 cup Softened Butter (not melted)
  • 2 Bananas, ripe and mashed
  • 1 teaspoon Cinnamon
  • Optional: 1 cup Dark Chocolate Chips or Chopped Walnuts

Instructions

  1. Combine all ingredients in mixing bowl and blend until smooth.
  2. Fill greased muffin cups 3/4 full.
  3. Bake at 350 F for 14-18 minutes or until golden brown and inserted toothpick comes out slightly moist.
