Are you a fan of the healthy protein packed Kodiak Power Cakes mix? We love to make muffins with it at our house and they even make a gluten free one that I order of Amazon. One of our favorites are these Banana Kodiak muffins. Theses babies are hearty, easy to make, seriously yummy and can be GLUTEN FREE (if you use the GF mix)! Woot woot! My boys with celiac disease love these muffins so much that they have become a staple at our house. We always have a bag of them in the freezer to heat up for quick breakfast or packed in a lunch box. Sometimes we add walnuts or mini chocolate chips, which is also wonderful!
I have not been able to find the Gluten Free Kodiak Cakes Mix anywhere around me, so I order from Amazon here in a six pack.

Banana Kodiak Power Muffins
Ingredients
- 2 cups Kodiak Power Cakes (I use the Kodiak Gluten Free mix)
- 1 cup Milk
- 1 Egg
- 1/2 cup Brown Sugar
- 1/4 cup Softened Butter (not melted)
- 2 Bananas, ripe and mashed
- 1 teaspoon Cinnamon
- Optional: 1 cup Dark Chocolate Chips or Chopped Walnuts
Instructions
- Combine all ingredients in mixing bowl and blend until smooth.
- Fill greased muffin cups 3/4 full.
- Bake at 350 F for 14-18 minutes or until golden brown and inserted toothpick comes out slightly moist.

These were delicious and moist! I did make a few changes. I used 3 egg whites and mixed them until they peak. I used truvia brown sugar and sugar free Hershey’s chocolate chips. My picky 12 year old had 4 of them.

It depends how big your muffin tray is…I usually get about 18-20 muffins in my regular one but if I use my Demarle silicone ones that are bigger I only get about 12-14

Has anyone done the math for calories, carbs, sugars & protein per muffin on this recipe
