If you follow me on Instagram, then you know that my family and I have literally been eating our way through New York the last few days. It has been WONDERFUL (Levain Chocolate chip Cookies, Magnolia Bakery Banana Pudding, Black Tap Shakes, Eataly pasta and pizza etc) , but I am ready to make some good healthy choices for then next few days at least, before I start trying to re create the recipes for all the awesome NYC food we ate! I have promised copy cat recipes, and they are coming!! But for now lets talk about some very tasty veggies…Are you a fan of Brussel Sprouts? I am if they are prepared well, like these Browned Butter Brussel Sprouts. I think there is something about browned butter that just takes what ever it is used for up a notch or two! I especially LOVE browned butter in these Chocolate Chip, pretzel and caramel Kitchen Sink Cookies...but lets get back to the Brussel Sprouts since they are the star of the show today!
You may wonder why eat Brussel Sprouts? Well let me tell you, these little veggies are a serious nutrient powerhouse! They are called a super food, for a reason.
These cruciferous vegetables resemble mini cabbages and are high in fiber, vitamins, minerals and antioxidants, making them a a very nutritious addition to your diet. They also come with added health benefits, including the potential to reduce the risk of cancer, decrease inflammation and improve blood sugar control. You can google health benefits of Brussel Sprouts to read more about the studies that have been done. I read a few, and found them very interesting and very motivating to find good recipes to get this little vegetable into my families diet. I have found that it is VERY important for the best flavor to buy them as fresh as possible and to NOT overcook them. I love the flavor of this Brussel Sprouts recipe and I love that it is quick–especially in the Instant Pot. I also love this recipe here for Golden Sauteed Brussel Sprouts too. YUM! I find that veggies are SO much easier to eat when they are prepared well. ENJOY!
PrintBrowned Butter Brussel Sprouts
Ingredients
- 2 pints Brussels sprouts
- 2 tablespoons butter
- 2 tablespoon chopped almonds
- Salt and freshly ground black pepper to taste
Instructions
- Trim the Brussels sprouts and cut an X into the base of each.
- Steam the Brussels sprouts for 10 minutes. Remove from heat (**See below for Instant Pot directions)
- Melt butter in a large skillet along with chopped almonds and cook until it turns nut-brown in color.
- Just before add steamed Brussels sprouts and toss until well coated.
- Then season with salt and pepper to taste and serve.
Instant Pot Directions:
- Take prepared Brussel sprouts and place in steamer basket on top of trivet that comes with the Instant Pot (if you have a steamer basket–if not shut place sprouts on trivet)
- Pour in 1 cup of water
- Cook on high for 3 minutes and then do a quick release before opening lid.
