Ingredients
Scale
- 8 cups russet potatoes, diced
- 1 yellow onion, diced
- 2 large carrots, peeled and chopped
- 1/2 cup celery, chopped
- 16 ounces Ham, cubed
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
- 1/4 cup flour (substitute gluten free flour if needed)
- 4 cups chicken broth
- 1 1/2 cups heavy cream (you can use half and half or milk)
- 1/2 cup sour cream
Instructions
- Place everything, except flour, cream, and sour cream into the slow cooker.
- Cook on low for 7-8 hours or high for 4-5 hours.
- Using a potato masher, mash about 1/3 of the potatoes (you don’t need to worry about the ham—it won’t really mash that much)
- Add the flour, cream (or milk) and sour cream and stir everything together.
- Cover and cook on high for an additional 15 minutes.
- Serve with a sprinkling of chives or grated cheese if desired.
