The boys are back in school this week–phew! I am ready to be back on a regular schedule again! Did I mention that we had only one day of school last week–hah?! No snow or ice in the forecast this week, just rain, so school should be on. This morning I finished up my weekly menu plan for this week and made a list for the grocery store. I love to get organized and do as much meal prep ahead of time as possible. My evenings get busy and having a plan helps tremendously. Tonight we are having some friends over and our local missionaries for dinner. I have set the dining room table and started the chicken parmesan. I have also made zucchini noodles as an option for tonight. I am looking forward to dinner! What are you making this week?

Here is what is on my menu:
Monday: Chicken Parmesan ( this is an amazing recipe but the post could use some new pictures). I am going to serve it with angel hair pasta and ‘zoodles’ (zucchini noodles).
Tuesday: Pulled Pork with Cilantro coleslaw
Wednesday: Tuscan Lentil Soup
Thursday: Chili Verde (using pulled pork leftovers)
Friday: PIZZA–I am going to make this Pesto Chicken with Pinenuts and Feta
Saturday–Date Night–out
Sunday: Classic Pot Roast with Wonderful Mashed Potatoes
