Happy Friday sweet friends!
I hope you have had a good week. Mine was a bit crazy! My husband was in California all week on a business trip and here in the South we had some frigid icy temperatures (at least for us) and therefore NO SCHOOL all week until today! It was fun…but, I was ready for my cute boys to be back on a schedule and have things to do again! For some reason teenagers fight bed time worse than toddlers!
Today is Friday and the first day of school we had all week and I thought that called for a little cake and this mini chocolate cake fit the bill perfectly!
Sometimes you need a reason to celebrate, you know?!
Maybe because you (like me) survived the week with kids cooped up in the house for 4 “snow days” in a row…
or you have stuck to your New Years Resolutions for a whole week or even just a day…
or your baby slept thru the night (or you got your teenager to bed at a decent hour without a fight)…
or hey, it’s Friday …or even Wednesday… or any day and any reason…
Life is good and calls for cake, every now and then!
Trust me, be creative if you have to but come up with a reason to make this glorious mini chocolate cake! I know my family will be thrilled to come home to this fun treat tonight!
I usually prefer cookies if I am going to make a treat (especially these ones--yum!) but I must say this ridiculously chocolatey cake topped with LOTS of dreamy chocolate buttercream is the stuff dreams are made of! I love how simple and easy it is to whip up, and it is the size too… just big enough to share, but small enough that you won’t have much leftover to threaten your healthy eating goals! Perfect!

Mini Chocolate Cake
Description
A ridiculously chocolatey cake topped with LOTS of dreamy chocolate buttercream is the stuff dreams are made of!
Ingredients
- 1 cups sugar
- 1 cup flour
- 1/2 cup unsweetened cocoa (I used Dutch cocoa –which is darker)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 eggs
- 1/2 cup buttermilk {I’ve used 1% with good results too}
- 6 Tablespoons melted butter {Butter is better but canola oil is fine}
- 1 tsp vanilla
- 1/2 cup boiling water
Classic Buttercream Frosting
- 1/2 cup of butter, softened
- 1/3 cup of cream or milk (maybe a little more to achieve your desired consistency )
- 1/2 cup of unsweetened cocoa
- pinch of salt
- 2 cups of powdered sugar
- 1 tsp vanilla
Instructions
Cake:
- Preheat oven to 350
- Butter or spray with cooking spray one cake pan ( 8×8 square or 8-9 inch round) I like to cut a piece of parchment out for the bottom and then butter it and the sides.
- Combine sugar through salt in a large mixing bowl.
- Make a well and add remaining ingredients, except the boiling water.
- Mix on medium speed for about 2 minutes.
- Then stir in one cup boiling water.
- Batter will be smooth and very runny.
- Pour into prepared pan.
- Cook for 20-30 minutes, depending on your oven–watch it starting at 20 minutes–when toothpick comes out clean–it is done. Do not overcook!
- Set cake on a wire rack and allow to cool for 5 minutes and then flip out onto a rack or serving plate to cool completely before frosting.
Chocoalte Butter Cream Frosting:
- Place butter in a mixing bowl and beat.
- Add pinch of salt, cocoa, powdered sugar and vanilla.
- Beating together on high for 3-4 minutes until fluffy…may need to add more cream or milk to reach desired consistency, I like mine fluffy.
