Easter Rice Krispy Nests

Ingredients

Scale
  • 5 Tablespoons butter
  • 10 cups miniature marshmallows
  • 6 cups rice krispies cereal
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup creamy peanut butter
  • 1 cup coconut
  • green food coloring
  • Small egg shaped candy such as chocolate eggs or jelly beans. (I used Cadbury Chocolate Eggs)

Instructions

  1. First if using the coconut grass: Take a cup of coconut and place in a small plastic bag. Add a couple of drops of green food coloring and mix around to dye the “grass”
  2. Melt 5 Tablespoons of butter in a large pot over medium heat until completely melted.
  3. Add in marshmallows and stir constantly.
  4. As soon as the marshmallows are melted, remove from heat and add salt, vanilla and creamy peanut butter. Stir until smooth.
  5. Add in the rice krispies cereal and stir to combine.
  6. Transfer mixture to prepared pan and carefully press the mixture into the pan without compressing them too much. (Be gentle because tightly compressed rice krispie treats are hard to shape after)
  7. While they are still soft, cut into small squares and shape into little nests with lightly buttered hands.
  8. Sprinkle on some colored coconut and place 3 little eggs in the middle. Enjoy!
