Every Monday night we have ‘Family Home Evening’ a night dedicated to strengthening our family and love of God and Jesus Christ. We start and end with prayer, sing songs, read scriptures, share ideas, sometimes play a game or watch a fun video (like these ones) and we ALWAYS have a treat! I think that the treat is my boys favorite part of the night. We switch off assignments for prayers, lesson, songs and treat. Last week my youngest son Cannon was in charge of the treat and he wanted to make these Easter Rice Krispy Nests.
We had a great time making them together and they were a huge hit. I thought he ‘grass’ was fun to make, but I noticed some of my boys was picking it off! So you could leave that off, if you are not a coconut fan. We made our favorite peanut butter Rice Krispy recipe for the base, but you could make the classic recipe and it would be great too (just not as brown). Cannon and I found the easiest way to make the nests, was to make the recipe like usual and then cut them into small squares (before they had hardened up) and then shape them into little nests. They turned out so cute and were so fun to make together. I think this will be an Easter tradition for us!
On Monday night we watched this beautiful video and talked about how Jesus Christ is the #princeofpeace.
Happy Easter friends!
PrintEaster Rice Krispy Nests
Ingredients
- 5 Tablespoons butter
- 10 cups miniature marshmallows
- 6 cups rice krispies cereal
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup creamy peanut butter
- 1 cup coconut
- green food coloring
- Small egg shaped candy such as chocolate eggs or jelly beans. (I used Cadbury Chocolate Eggs)
Instructions
- First if using the coconut grass: Take a cup of coconut and place in a small plastic bag. Add a couple of drops of green food coloring and mix around to dye the “grass”
- Melt 5 Tablespoons of butter in a large pot over medium heat until completely melted.
- Add in marshmallows and stir constantly.
- As soon as the marshmallows are melted, remove from heat and add salt, vanilla and creamy peanut butter. Stir until smooth.
- Add in the rice krispies cereal and stir to combine.
- Transfer mixture to prepared pan and carefully press the mixture into the pan without compressing them too much. (Be gentle because tightly compressed rice krispie treats are hard to shape after)
- While they are still soft, cut into small squares and shape into little nests with lightly buttered hands.
- Sprinkle on some colored coconut and place 3 little eggs in the middle. Enjoy!
