Sorry I have been missing for a few days!
I hope you have had a good week! We have been enjoying a little Spring Break holiday in sunny Florida. I had wanted to post a couple of yummy recipes like this ranch cottage cheese dip, while I was there but unfortunately my laptop refused to work, so I was forced to spend all my time here:

It has been cold and a bit gloomy this Spring in Chattanooga, so the Florida sunshine felt incredible! We got so excited for summer that we came home and opened our pool even though it will be at least a month before we can actually enjoy it. Well, a month for me, I am sure my crazy boys will try to swim earlier and freeze!! All of this has got me thinking about summer and swim suit season! We still have some time to get in shape and trim up a bit! I am trying to watch my diet and make healthier choices like eating more veggies! I don’t know about you, but I enjoy vegetables so much more when I have a delicious dip! This ranch cottage cheese dip is so simple to make and tastes fantastic! I love that it has cottage cheese which is high in protein. This dip will be a staple at our house as the weather warms up. Not only will it help us eat more veggies but it tastes great with crackers too!

Description
Easy, flavorful and protein packed dip for veggies and crackers!
Ingredients
- 16 oz low fat cottage cheese
- 2 TSBP of Hidden Valley Ranch Dressing Mix (Not the “dip” mix)
- 1/2 cup of mayonnaise
Instructions
- Mix ingredients together.
- Refrigerate for 30 minutes
- Serve with fresh raw cut up vegetables. Carrots, celery, broccoli, cauliflower, red bell peppers, etc.
