These hootenanny pancakes are one of my boys very favorite breakfasts, so I thought it was time to bring out of the archives and into the spotlight with some new pictures! I love to make these oven pancakes for my family because they taste so good and are really easy to blend up and pop into the oven. There are a lot of names for this recipe including, German pancakes, Dutch baby pancakes, Puff pancakes, Volcano Pancakes, but we like to call them Hootenanny’s…just because it is a fun word to say!
Hootenanny Pancakes, are a delightful twist on traditional pancakes. These pancakes are made with a few simple ingredients like eggs, milk, flour, and a touch of vanilla, but what sets them apart is the way they puff up in the oven. The result? A golden, crispy, and airy pancake that’s as visually appealing as it is delicious.
This has become a favorite dinner on Sunday night. I make two batches, one regular and one using my gluten free blend of flour for my sons who are gluten free. The GF version does not puff up as much, but it still tastes great! I hope you enjoy this quick, easy and delicious hootenanny pancakes as much as wet do! Maybe it will become a family favorite for you too!
Just for fun I sometimes add a little vanilla and/ or cinnamon to the hootenanny pancake batter (see recipe) but I usually forget. I actually have this recipe memorized and throw it together without thinking most of the time. I like those additions when I remember, but the pancakes are great without too!

Description
Hootenanny Puff Oven Pancakes, also known as German Pancakes or Dutch Babies, are a delightful twist on traditional pancakes. A golden, crispy, and airy pancake that’s as visually appealing as it is delicious.
Ingredients
- 5–8 Tablespoons of butter
- 6 eggs
- ½ tsp salt
- 1 c. milk
- 1 cup flour
- Optional: add a half a teaspoon of vanilla and a teaspoon of cinnamon
Instructions
- First turn on oven to 400. Put 5-8 Tablespoons (the original recipe called for the whole cube of butter–I prefer less) of butter in a 9×13 pan. Put the pan in the oven to heat up. It is important to heat up your pan before pouring the batter into it; this makes the the pancake get puffy and form peaks and valleys while it bakes. Usually by the time I have the batter whipped up the butter is melted. (Don’t let the butter burn, though.)
- Blend the rest of the ingredients in your blender and pour into the melted, sizzling butter in the hot pan. Bake at 400 for 20-25minutes. The pancake will be all puffed up in crazy “hills” and golden. Serve hot with syrup–and my favorite, sprinkled with lots of berries! Yum!

These are a favorite at our house. I’ll have to add vanilla next time. My recipe is the same except only 2 or 3 tablespoons of butter and it works great.

After making this for years, I figured out the secret ingredient is a teaspoon of vanilla in the batter. It makes it delicious. Also if you turn up the temperature in the last few minutes to 425 it bubbles more!
I love that others call this hootenanny! But, don’t forget the song when you pull it out of the oven.

Tastes best w/ homemade syrup…
1 1/2 cups white sugar 3/4 cup buttermilk 1/2 cup butter 2 tablespoons corn syrup 1 teaspoon baking soda 2 teaspoons vanilla extract
In a saucepan, stir together the sugar, buttermilk, butter, corn syrup, and baking soda. Bring to a boil, and cook for 7 minutes. Remove from the heat, and stir in the vanilla.

I grew up calling them German Pancakes or Dutch Babies. They are still a favorite with my kiddos. A variation with 3 eggs, 1/2 C milk, 1/2 C flour – on melted 1 1/2 T butter. Your recipe looks like it creates a larger amount so I will have to try. My favorite topping for it is lemon juice and powdered sugar. YUM!

We call this a Dutch Baby. I use the same recipe except I use 4 eggs instead of 6. I serve them with canned peaches and sprinkle some brown sugar on top.

These are a favorite. I learned to put in sliced apples and cinnamon sugar just before you pour the batter in. It tastes like apple pie.
