Well hello!
Is your week flying by like mine is? I can’t believe it is already Wednesday and everyday I run out of time to get everything done that I want to. On Sunday evening, I convinced my sweet husband to get out our Christmas tree! I know, it is super early, I think it is a record for us! We usually don’t get our tree up until the day after Thanksgiving, but this year I couldn’t shake the desire for twinkly lights! I told my family that we will not forget Thanksgiving, but that we can be thankful in the warm glow of our Christmas tree! Then after all my big talk—it is already Wednesday and I still haven’t had a chance to actually decorate the tree! Ha! Oh well, life is just like that sometimes. Hopefully I will get to it tonight! Here in the Chattanooga area we have been fighting some terrible wildfires that have filled our city with a terrible smokey haze. It is awful and my poor Coleman who has allergy induced asthma has really struggled! We have spent a lot of time going to the Doctor to get breathing treatments and new inhalers and trying to keep him indoors. I sincerely hope it clears out soon! It doesn’t help that we are also experiencing a severe drought–one of the longest dry spells without any rain that people can remember! There is still no clouds int he sky today, but the air seems to be better, thankfully! On the bright side, they say this drought has contributed to our seriously beautiful fall foliage this year. We are sure LOVING that!
Since I have the holidays on my mind, I have been experimenting with some fun party dishes. I made this wonderful hot crab dip for my family last weekend and we all LOVED it! Warm, cheesy and packed with flavor, trust me, this hot crab dip will be a big hit at your holiday gatherings! I started out serving it with crackers as pictured but I also had tortilla chips for my gluten free boys and we all agreed that both options were great! This dip was just as tasty warmed up a couple of days later. Just an FYI, I used imitation crab and it worked perfectly in this recipe!
