Well hello! How is your week going so far? Last week was fall break for us and we were on vacation in Florida. It was wonderful and we are all dragging our feet just a little, to get back into the swing of things again at home. And this week could not be busier with the start of my younger boys football playoffs and the start of the school soccer team’s season for my older son! I can already tell this Fall is going to keep us hopping! At least the weather is finally cooling down and the leaves are turning colors! As much as I loved the beach, it was so fun to come home to the beautiful fall foliage. I feel like the autumn display was a sweet welcome home. I love this time of year so much! Don’t you?! And these applesauce snickerdoodle muffins are perfect for fall and so much fun! Easy to make, cute and super yummy! My boys love that there are no apple chunks. While they love to eat fresh apples, they do not like big chunks of them in their muffins. I know, silly boys! It does make it easier on me…no peeling and chopping of apples! The addition of applesauce is not only quick and easy but also adds a lot of flavor and helps give the muffins an awesome moist texture. These little muffins will melt in your mouth! You can of course make full size muffins too! These are the perfect treat for Fall!

Ingredients
- ½ cup butter
- ½ cup sugar
- 2 eggs
- ¾ cups Applesauce
- 1 ¾ cups flour
- 1 tbsp baking powder
- ½ tsp Salt
Topping:
- ¼ cup butter, melted
- ½ cup sugar
- 1 tsp cinnamon
Instructions
- Place butter and sugar in the bowl of your mixer and cream together on medium low.
- Add in the eggs one at a time and beat until the mixture is light and fluffy.
- Sitr in the applesauce.
- Add the dry ingredients (sift together in a separate bowl, if desired–to save time I normally do not do this. I just add the flour and then sprinkle in the rest of the dry ingredients across the top before I mix it all up)
- Spoon the batter into greased or paper lined muffin tins.
- Bake at 350 for 12-18 minutes (less if using mini muffin pan) until golden brown.
- While the muffins are still warm dip them in melted butter and then in cinnamon sugar.
