Hello friends! How is your week going? I can not believe it is Wednesday already! We are home from Mexico and I am trying to catch up on everything here at home! With a family of boys and being gone all last week, I have lots (and LOTS ) laundry, lots of grocery shopping to do in order to restock the kitchen and lots of sports practices, lesson and cleaning too! Life is busy right now! Well, I think it always is, but that is a good thing! My boys are all playing soccer this Spring and it is so fun! We have been playing baseball the last few years, so it is fun to change it up! Do your kids play soccer? I love watching the games, but I really need to brush up on the rules so I understand what is going on!
Does your local ballpark or movie theatre or mall sell cinnamon sugared pecans or almonds? I seem to see them everywhere now and the smell of the cinnamon sugared pecans roasting is seriously intoxicating! That scent pulls me in like a magnet! Warm sweet and salty nuts are the BEST! I was happy to find an easy and delicious recipe so that I could make them at home without any fancy equipment. I like to make a big batch of these cinnamon sugared nuts and keep them in a glass jar cup in the cupboard. They store well and you will find lots of uses for them! They are perfect to set out at a party or gathering as a little treat for your guests to nibble on , they are divine spooned over ice cream or perfect for sprinkling on salads. In fact, I have a wonderful salad to share with you next using these pecans. Now, I used pecans in this recipe, but you can change it up and use almonds, walnuts, cashews or a mixture of nuts. During the holidays these cinnamon sugared pecans other nuts would make a wonderful gift presented in a cellophane bag with a pretty bow. I have to hide these from my family (and myself) or they will be gone way too quickly. They are wonderful! Enjoy!

PrintCinnamon Sugared Pecans
Ingredients
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
- 1/2 teaspoon salt
- 1 egg white
- 1 Tablespoon water
- 1/4 teaspoon vanilla
- 2 cups pecans (or nut of your choice)
Instructions
- Preheat oven to 250 degrees F. and line a baking dish with parchment paper (I use a rimmed cookie sheet)
- In a gallon size ziplock bag, mix the sugar, cinnamon and salt to combine and set aside.
- In a large bowl use a hand mixer (or a wise and some arm power) to beat the egg whites, water and vanilla together.
- Add the pecans and stir to coat them with the egg white mixture. Make sure each nut gets “wet”.
- Use a slotted spoon and remove pecans from the egg white mixture and drop them in the bag of cinnamon sugar.
- After all the pecans are added, close the bag and shake it to coat all the nuts.
- Using a clean slotted spoon, remove the pecans from the bag and place onto the prepared baking sheet in a single layer.
- Bake for one hour, stirring the nuts every 15 minutes to insure they cook evenly.
- Remove from oven and cool.
- The nuts can be stored at room temperature for 2-3 weeks.

HI Gail! I got those placemats for Mothers Day last year. My hubby bought them at Bed Bath and Beyond. It is actually my second set. I have a blue set too. I love those quilted placemats–they are cute–they come out of the washing machine looking great still and they have a different pattern on the back. So it feels you get two sets for one!
