Today I am posting from Mexico! I accompanied my husband on a business trip to a resort south of Cancun called the Fairmont Mayakoba. It feels like we are deep in the jungle and then the path will open onto the most beautiful beach. I am enchanted by this place!
Have you ever heard of Balsamic Gaucamole? I thought this post was perfect for today since here in Mexico you can eat guacamole with breakfast, lunch and dinner! I LOVE it! Avocados are something I always have on hand at home. There are a million ways I like to eat them… on toast with salt and pepper, added to a turkey or veggie sandwich, cubed on salad or atop soup, but I think our all time favorite way is guacamole! We have a family tradition every Sunday after church we get out a snack of chips, salsa and guacamole. It is the best! Recently I tried some guacamole prepared with balsamic vinegar and I loved it! It shocked me that such a simple addition could add such a unique and delicious depth of flavor! You have got to try this method of guacamole and let me know what you think!

Description
This is not much of recipe–more of method–simple and SO GOOD!!!
Ingredients
- 1 avocado
- sea salt
- 1–2 teaspoons of balsamic vinegar
Instructions
- Peel avocado and remove seed.
- Smash with a fork to desired consistency.
- Add salt to taste
- Stir in balsamic vinegar
- Enjoy with chips

ok, it was terrific. really nice flavor and easy to do since you don’t need to chop cilantro, onion, tomato, etc. my husband and i both loved it!
