Hello my friends! Guess what? I am blogging from beautiful Hawaii today! The trip started out a little rough with delayed flights, luggage that did not make it and a lost wallet, but things are looking up now and I am just so happy to be here! Although it is sunny and warm here, I know back home we are quickly entering into soup weather, which I LOVE! I made this rustic cabbage soup on a cold and blustery day last week and it was WONDERFUL!

- Cabbage: The star of the show, cabbage lends a mild sweetness and hearty texture to the soup. It softens beautifully during the cooking process, adding a comforting element to each spoonful.
- Potatoes: Potatoes provide a creamy consistency, making the soup both filling and satisfying.
- Carrots: Carrots offer a touch of sweetness and vibrant color to the dish.
- Onions and Garlic: These aromatic ingredients add depth and complexity to the soup’s flavor profile.
- Broth: Vegetable or chicken broth forms the base of the soup, infusing it with savory goodness.

I am usually not a big fan of cabbage but this recipe has won me over to the vegetable! The soup was fantastic –warm, nourishing, healthy and delicious. And it came together quickly whicih is always a big plus in my book! I am sure this will be a regular on our menu this winter! Description
There’s something inherently comforting about a bowl of soup that warms you from the inside out, especially when it comes to this rustic cabbage soup. It’s hearty, wholesome, and incredibly satisfying.
Ingredients
- 1 tablespoon extra virgin olive oil
- a big pinch of salt
- 1/2 pound potatoes, skin on, cut 1/4-inch pieces
- 4 cloves garlic, chopped
- 1/2 large yellow onion, thinly sliced
- 5 cups chicken or vegetable stock
- 1 1/2 cups white beans, precooked or canned (drained & rinsed well)
- 1/2 medium cabbage, cored and sliced into 1/4-inch ribbons
- 1/2 cup Parmesan cheese, freshly grated
Instructions
- Warm the olive oil in a large thick-bottomed pot over medium-high heat.
- Stir in the salt and potatoes.
- Cover and cook until they are a bit tender and starting to brown a bit, about 5 minutes – uncover to stir a couple times.
- Stir in the garlic and onion and cook for another minute or two.
- Add the stock and the beans and bring the pot to a simmer.
- Stir in the cabbage and cook for a couple more minutes, until the cabbage softens up .
- Now adjust the seasoning – getting the seasoning right is important or your soup will taste flat and uninteresting.
- Taste and add more salt if needed, the amount of salt you will need to add will depend on how salty your stock is (varying widely between brands, homemade, etc)…
- Serve drizzled with a bit of olive oil and a generous dusting of cheese.

This recipe is awesome! Instead of olive oil, I sautéed some bacon and cooked the potatoes in the bacon grease. Didn’t add salt until I had it for dinner. Added carrots, chopped 1/4″ cubes. And used homemade bonebroth . Topped with parm-cheddar mix and bacon crumbles. YUM!
Quick question…can this be frozen in serving sizes?

I just found and joined your blog after seeing this recipe. We love cabbage and make many soups with cabbage and have a head I need to use and all the other ingredients along with some spicy sausage so am going to do this in my slow cooker with 5he browning function and let it slow cooker and steam in all that awesome flavor for about 4 hours!!!!!! My mouth is watering already!😋

my red Hat Society chapter holds monthly potluck dinners. In February, we hold soup night. This sounds like a wonderul vegetarian dinner served with bread. If you arent concerned with it being vegetarian, i might add some spicy sausage or chicken breast for additional protein. This will be my soup contribution with choriso sausage. The hostess will provide fresh baked bread and coldcuts for sandwiches. What a nice dinner. Here in New england, soup makes a wonderful lunch or light supper. Its what many of us grew up on.

Made this for dinner tonight and it was wonderful! I added some sausage and carrots and omitted the beans (just using what I had on hand) – anyway, it was delicious!

I love cabbage especially in soup when it is cooked down so much…yum. I love that this soup sounds really hearty, but it is still very healthy.

Hi Britt,
I would think that 1/2 lb is just 2 potatoes–BUT I think it would be great with more! Also–I just used a can of beans.–that 1 1/2 cups is already cooked. I did not even measure–I just kept it easy for me:)
