Just to be cruel and mean I am posting yet another delicious temptation…Pumpkin Pie Squares. This twist on pumpkin pie is perfect for this time of year. And it is even more perfect served with real whipped cream. Like most pumpkin desserts, this tastes best when chilled. I sent a platter of these pumpkin squares with my husband to a meeting he had to attend. The empty dish he brought home with him just confirmed what I already new…this recipe is a keeper. Thanks to my sister Melissa for passing it along.

Ingredients
Scale
CRUST:
- 1 box yellow or spice cake mix, reserve 1 cup for topping
- 1/2 cup melted butter
- 1 egg
FILLING:
- 1 29oz can pumpkin (I used Libby’s-make sure it is pure pumpkin, not pumpkin pie mix)
- 1.5 cups evaporated milk
- 1.5 cups sugar
- 4 eggs
- 1 t. salt
- 2 t. cinnamon
- 1 t. vanilla
- 1 t. ginger
- 1/4 t. cloves
TOPPING:
- Reserved 1 cup dry cake mix
- 1/4 cup sugar
- 1 t. cinnamon
- 1/8 cup butter
Instructions
- Preheat oven to 350. Lightly spray a 9×13 pan with non-stick cooking spray.
- In a mixing bowl, mix together cake mix (reserving one cup for the topping), melted butter and egg. Spread into greased pan.
For the filling,:
- mix all ingredients well and pour over crust mixture in pan.
For the topping:
- mix together reserved cake mix, sugar, cinnamon and butter.
- Mix until crumbly and sprinkle on the pumpkin filling mixture.
- Bake 1 hour or until a nice inserted in the middle comes out clean. (I just poke it with a knife and make sure it comes out clean).
- Chill and serve with real whipped cream.
I love these squares!! Its like a mix between a cinnamon roll and pumpkin pie!! Its so easy to make, my 9yrs old helped me, but she did most of the work! I did end up using Libby's Pumpkin Pie Mix(even though you said not too) and it worked just as good. I just added the eggs and evaporated milk,and left out the other sugar and spices, since that is already added in the pre-made mix. LOVED IT, LOVED IT, will make it again!

I just realized I haven't responded to your comment yet…sorry! I haven't ever noticed the crust being soggy. Of course, I slather it in whipped cream so a slight sogginess might go undetected:) I'll watch for it next time but don't think you should have that problem with this recipe. Let me know if you do try it and it still comes out soggy…Good luck!!

I made this for Thanksgiving at my SIL's house and it was incredibly delicious!!!! I couldn't believe how easy it was to make and how yummy it was. I have a similar recipe that I make, and I wonder if you have the same problem I always have – the crust on the bottom is soggy in the middle part of the pan. I have baked it to the point of almost over-baking the top crust, and still I have soggy crust. I'm thinking next time I might try to bake the bottom layer for 10 minutes before putting the pumpkin filling on.
