Peanut Butter Bars with Fudge Frosting

Bars

  • 3/4 cup butter
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 3/4 cup peanut butter
  • 2 eggs
  • 1/2 teaspoon vanillaBars
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup flour
  • 1 1/2 cup oats (quick or regular, both work)

Chocolate Fudge Frosting

  • 1 cup sugar
  • 5 Tablespoons butter
  • 1/3 cup milk
  • 1 cup semi sweet chips
  • 3/4 cup mini marshmallows

Instructions

Bars

  1. Cream together butter and sugars.
  2. Add peanut butter, eggs and vanilla and beat until smooth.
  3. Next add the dry ingredients an mix the oat mixture until a firm dough is made.
  4. Press into a jelly roll pan ( 15 x 11) 
  5. Bake at 325 for 12-15 minutes, depending on your oven…BUT DO NOT OVERBAKE!!  The bars should be barely golden.  If you over cook them, they are dry and not very good. 
  6. Allow to cool while you make your frosting 

Chocolate Fudge Frosting

  1. Place the sugar, butter and milk in a small saucepan over medium-low heat and cook stirring constantly, until the mixture comes to a boil.  
  2. Boil stirring constantly for 1 minute. 
  3. Remove the pan from eh heat, add the chocolate chips and stir until melted.
  4. Then add the marshmallows and stir until melted.
  5. Spread onto the mostly cool bars
  6. Allow to cool before cutting
