Guess what everybody?? After 10 looooong days in a hotel with my 5 boys we are finally moving in to our home in Tennessee! Yeah! I am up to my eyeballs in boxes, but I can’t wait to get back to cooking and baking soon! This was a bread I made before I boxed up my kitchen in Utah….Even though strawberry season is coming to an end…it is not too late to make this unique and delicious sweet strawberry bread. My friend Marie introduced me to this little delight years ago. In fact the first time I made it was for bridal shower I hosted for my sister-in-law Carrie Beth…remember that Carrie? I had never heard of strawberry bread before and couldn’t wait to try it. It was a big hit! My favorite thing about this bread is the crust–it is toasted to a golden brown and pleasantly sweet. The bread is very moist with a hint of cinnamon. This is a great way to use the end of the season strawberries that aren’t as sweet for just popping in your mouth. Enjoy!
Sweet Strawberry Bread

Ingredients
Scale
- 3 cups flour
- 2 cups sugar
- 1 tsp baking soda
- 3/4 tsp cinnamon
- 1 tsp salt
- 4 eggs
- 1 1/4 cup canola oil
- 2 cups fresh strawberries, cut small
Instructions
- Mix flour, soda, cinnamon and salt in bowl. Add eggs, sugar, oil. Mix until moist, carefully add strawberries. Batter will be thick. Spoon into greased and floured loaf pans. Bake at 350 for 1 hour and 10 minutes. Cool in pans 10 minutes then remove.

My bread came out very crumbly and not smooth at all. I didnt add anything else to it to make it smooth. Anyway I added all the ingredients you had listed including the 1 1/4 cup oil and still was very dry and crumbly. what do you think went wrong?

you mention "loaf pans" does this make two loafs. and what size pan do you use 9 inch or 8 inch ?

I am so sorry that you had trouble with the batter being too thick. I double checked the recipe and I had left off 1/4 cup of the oil. I am so very sorry. i usually double check them before i push the post button–but with the move I must have forgotten. i promise to do better. The recipe is fixed now. It should read 1 1/4 cups oil not 1 cup. Please forgive me!

I had the same problem with the thick consistency only I didn't add milk and it didn't turn out….sad day! Mine looked like a crumble, but I've never made any type of sweet bread so I had no idea what it was supposed to look like. I baked it and it fell. If yours looks crumbly then add milk! Darn! It still tasted good!

I tried your recipe today and I know you said that it would be thick, but mine was unbelievely thick. I had to add milk. There is no way it would have been edible if I had not added some milk. It baked beautifully and taste wonderful. I have just found your blog and love it.

Strawberry Butter
½ cup butter (softened)
1/2 cup fresh strawberries (chopped)
1 cup confectioners sugar (powdered sugar)
Whip together the powdered sugar and butter first, and then fold in the strawberries.
It tends to separate if you don't eat it right away, but it can be whisked back together.
