I made 8 batches of this fantastic Shoepeg Salsa for a dear friend’s daughters wedding reception. It was really easy to make and very tasty so I thought I would share the recipe here. It is especially great served with fritos scoops! I made this again on sunday for an after church lunch for my family. Yummy!

Shoepeg Salsa
Ingredients
Scale
- 2 cans shoepeg corn (drain)
- 1 can blackeyed peas (drained and rinsed)
- 1 red bell pepper, diced
- 1 purple or sweet onion-diced
- 1 cup of chopped cilantro
- 1/2 cup wishbone robust italian dressing
- 1/2 cup wishbone sweet and spicy french dressing
Instructions
- Combine and enjoy!

Shoepeg corn is just a tiny corn. It comes in a can on the isle with all the other canned corn and vegtables. I think the brand i bought last time was green giant. Good luck! Another great recipe using is on theis site is Black and White bean dip. IT is a hot dip–0and seriously GREAT!!

Mel- I have a very similiar recipe that uses fresh avacado and black beans instead of the fresh pepper. It is one of our favorites.
