How is your weather today?
I feel like Spring weather is always so crazy! Do you need a nice bowl of warm comfort food like this, Cream Cheese Chicken Soup or a cool popsicle? We are currently on a Spring Break vacation and look what we woke up to…
SNOW!! It was a winter wonderland outside!
We usually go to Florida or Hilton Head for Spring Break, so this is quite the adventure for us! My boys are LOVING it though! Tomorrow we are headed into explore New York City, hopefully the weather will cooperate! I was going to share something else with you today but all this snow has gotten me in the mood for a warm bowl of soup and I recently re-photographed my FAVORITE soup. So–let me remind you about this gem from the archives…Cream Cheese Chicken Soup! This soup is just a big bowl of comfort! Whenever I have a friend in need of a nice of dinner, this is soup is the meal like to bring over. Warm, creamy, hearty and hits the spot every time!
I think I will make it tonight in our little vacation condo, using a rotisserie chicken from the grocery store. At home I would use chicken cooked using this method for shredded chicken in the Instant Pot from frozen chicken breasts. Either way, this soup is always so good and a family favorite at our house.

Ingredients
Scale
- 1 lb chicken (about 2 chicken breasts ), cooked and shredded.
- 1 onion, diced
- 1–2 Tb butter
- 2 cups sliced carrots (about 2 handfuls of baby carrots)
- 4–5 potatoes, diced small
- 3–4 cups chicken broth
- 1 c milk
- 1/4 c flour (sub GF flour blend or 1/8 cup corn starch for GLUTEN FREE)
- 8 oz package cream cheese
Instructions
- Saute onion in butter in pot.
- Once onions are semi tender (after about 5 minutes) add carrots and potatoes.
- Add 3-4 cups of chicken broth (enough to cover vegetables).
- Bring to a boil and then turn down to simmer until veggies are tender ( about 20-30 minutes)
- Mix flour (or corn starch) with milk and add to soup.
- Soften cream cheese in microwave then add to soup in little pieces and stir until melted.
- Season with salt and pepper.

I made this tonight and it was delicious! My family loved it. I used canned chicken (drained and added after the vegetables had softened) and it worked out great. I also added celery when I was sauteing the onion. Thanks to you and your sisters for sharing your tried and true recipes…EVERY one I have tried has been wonderful!

I love your recipes! Made this soup tonight, it was delish. (Mine didn’t thicken up as much as expected, but Mr. was hungry NOW so maybe I coulda let it cook a bit longer…or maybe I added too much water.) But the taste was FAB! Thanks!
